Cajun Cod with Puy Lentils

This is such a quick, easy recipe. The smoked paprika in the sauce gives it a lovely flavour. @merchantgourmet cooked puy lentil pouches are really convenient and cut the cooking time considerably.

Cajun Cod with Puy Lentils

Serves 4

INGREDIENTS

1 red onion, diced

2 tbsp olive oil

2 cloves garlic, crushed

150ml vegetable stock

Seasoning

5 sundried tomatoes, chopped

1 tsp smoked paprika

1 pouch @merchantgourmet cooked puy lentils

2 400ml tins chopped tomatoes

4 fresh cod fillets

METHOD

1. Fry the onion in the oil until softened.

2. Season and add the garlic, fry gently for a further minute.

3. Pour over the stock and simmer for 5 minutes.

4. Stir in both the tinned and sundried tomatoes, paprika and puy lentils.

5. Place the cod fillets on top and season.

6. Cover and cook on a low simmer for 15-20 minutes.

7. Check the cod is cooked through and serve.

Spicy Cod Tacos

Spicy cod tacos with a sweet corn, pineapple, avocado and lime salsa.

I got this recipe idea from @carlsbadcravings I used @morrisons cook from frozen cod steaks and seasoned them with chilli powder, garlic powder, smoked paprika, cumin, oregano and brown sugar. Then I baked them in the oven for 30 mins.

For the salsa- I had 2 left over corn on the cobs from our bbq on Saturday so I used these and added half a pineapple finely chopped, 1/2 red onion finely chopped, 1 avocado chopped, juice of half a lime and chopped coriander. Serve with warm tortilla wraps and natural yoghurt. It was so delicious- we’ve never had a pineapple salsa before or used the left of corn on the cob but we’d definitely do it again.

Smoked Haddock Macaroni Cheese

Two years ago I was on holiday with my family in Alnmouth, Northumberland where we visited an amazing little pop up seafood shack run by the restaurant Beaches. They serve sublime fresh food to go like lobster and chips, crab sandwiches etc and I was drawn to their smoked haddock macaroni cheese.

We took it back to our holiday house and my mum and dad dived in with their forks as well as us and the kids. It was delicious, not too overpowering in smokey flavour and the crunchy gratin top added another dimension. I can’t believe it’s taken me so long to cook it but here it is… Smoked Haddock Macaroni Cheese

Serves 4

INGREDIENTS

300g macaroni

4 small frozen/fresh smoked haddock fillets

25g butter

A little plain flour

3/4 pint milk

A handful of grated mature cheddar cheese

Seasoning

Panko breadcrumbs

METHOD

1) Cook the macaroni for 11 minutes.

2) I used @aldiuk cook from frozen smoked haddock fillets so baked them in the oven according to the instructions.

3) I made a cheese sauce by melting 25g butter and adding plain flour to make a thick paste. Then with the heat low, I gradually poured in 3/4 pint of milk whisking all the time.

3) Season then sprinkle in a handful of mature cheddar cheese and whisk until smooth. Turn off the heat.

4) Drain the macaroni and stir in the cheese sauce.

5) Transfer to an ovenproof dish and scatter over the haddock (break it up into small pieces first). Carefully stir it through the macaroni cheese.

6) Finish with scattering over panko breadcrumbs and bake in the oven at 180oC for 10 minutes (you may want to finish it off under the grill if it hasn’t browned enough).

Cheesy Basa Bake

Cheesy Basa Bake is an old favourite of mine that I haven’t cooked in ages. You can use any fish- I always go for a cook from frozen fish from @lidlgb @aldiuk or @morrisons for a speedy tea. It’s an adaptation of a @rachelallen1 recipe, only because you’re supposed to mix the cheese with cream and Dijon mustard and I didn’t have either in! 🤦‍♀️🤣

1) Follow the directions on the fish packaging for cooking- I preheated the oven to 180oC.

2) Slice 4 tomatoes and lay in an ovenproof dish, sprinkle over either fresh or dried thyme, a drizzle of olive oil and salt and pepper.

3) Lay the basa fillets on top and grate over cheddar cheese.

4) Bake in the oven according to the fish instructions- I did 30 minutes. I usually flash them under the grill to brown them too if necessary.

Basa and Chorizo Bake

If you’ve seen my meal plan for this week you’ll know this was supposed to be haddock and chorizo bake but unfortunately we couldn’t find any of the haddock fillets in the freezer section at @Lidl so we chose basa instead but any white fish would work. I really like having the cook from frozen fillets in as they’re such a life saver when I’ve forgotten to take anything out of the freezer! 🙈🤣 I made this for three of us so up the amount of fish if you’re cooking for more and add an extra tin of tomatoes.

Basa and Chorizo Bake

Serves 3

INGREDIENTS

350g new potatoes, halved

1 red onion, chopped

1 red/orange pepper, chopped

100g chorizo, skin removed and sliced

1 tbsp olive oil

1 garlic clove, crushed

Seasoning

3 sprigs of fresh thyme

400g chopped tomatoes

380g @lidl frozen basa fillets

METHOD

1. Preheat the oven to 180oC.

2. Parboil the potatoes for 10 minutes.

3. Meanwhile, fry the chorizo in the oil to release it’s flavour.

4. Add the onion and pepper and fry gently until soft.

5. Add the garlic and cook for a further 1 minute.

6. Drain the potatoes and add to the pan, stir to coat in the oil. Cook for another 3 minutes until beginning to brown.

7. Sprinkle in the thyme leaves and season.

8. Pour in the tomatoes and stir.

9. Put the fish fillets on top and cook in the oven according to their instructions.

10. Serve!

Trout, Beetroot and New Potato Salad

This was just for the adults tonight as the kids are not so keen on fish!

I just used a bag of baby leaves and added baby new potatoes which I’d boiled this morning and cut in half. Sliced beetroot and spring onion. I cooked trout fillets for 15mins at 200oC and flaked them over the salad. Then I finished it off with a dressing I made with 3 tbsp creme fraiche and 4 tbsp horseradish.

Lemon Pepper Basa

These were so tasty and very quick to make. I was a bit unsure about using mayonnaise but it worked really well. The @morrisons basa fillets are great to have in the freezer and are cooked from frozen.

1) Mix 4 tbsp mayonnaise with the juice of half a lemon and a good grind of pepper.

2) Dip the frozen basa fillets in the lemon pepper mayonnaise and then breakcrumbs so they’re coated well.

3) Place on baking parchment and cook at 190oC for 30 minutes.

4) Serve with chips and peas.
