I always love to try new recipes and this was a little different. It is griddled aubergine topped with Greek yoghurt mixed with fresh garlic, sprinkled with chopped mint, walnuts and chillis, drizzled with sherry vinegar and honey. On my first attempt, whilst it tasted amazing, I was a little flustered by trying to get all the components ready. However, the second time I made it, I prepared everything in advance and it was a breeze to make 🙌 We ate it like canapés by picking up a piece of aubergine covered with all the amazing toppings and devouring it. Like I said, it is a little different and whilst our 10 year old tried it but wasn’t sure, our 13 year old wolfed down slice after slice! 🤣

Cacio e Pepe

My favourite pasta recipe is Cacio e Pepe. It’s so simple to make but the flavours are out of this world- lemony, peppery, cheesy, smokey… soooo good! I’ve saved this recipe to my highlights 🙌

Serves 4

INGREDIENTS

400g dried spaghetti

250g diced pancetta

1 tbsp olive oil

2 cloves of crushed garlic

1 pinch of chilli flakes

Ground pepper

Juice of 2 lemons

70g rocket (arugula)

30g grated Parmesan

METHOD

1. Cook the spaghetti in boiling water for 11 minutes.

2. Fry the pancetta in the olive oil for 6-7 minutes until it starts to brown.

3. Add the garlic, chilli and pepper and fry for a further minute.

4. Turn the heat down and add the lemon juice.

5. Drain the spaghetti (reserving some of the water) and toss into the fried pancetta mixture.

6. Add the grated cheese and a little of the pasta water and stir.

7. Finally add the rocket and toss into the spaghetti until wilted.

Fajitas!

Homemade fajitas!!! You can’t beat a fajita can you?! 🤤 I used to buy the kits but for the last year or so I make them from scratch as the chicken fajita seasoning is so simple to make and the guacamole and salsa are so much tastier made fresh. The @morrisons mexican rice was a cheat but it was really tasty and only cost 47p!

Fajita chicken

I fry 3/4 sliced chicken breasts with sliced red onion and pepper and then sprinkle on around half a tsp of cayenne pepper, paprika, smoked paprika and cumin. Then I add a pinch of dried chilli flakes and a little water to stop it sticking.

Salsa

The salsa is simply 4 chopped salad tomatoes, with 1 small onion diced, the juice of half a lime, a pinch of dried chilli flakes and a small handful of fresh coriander chopped.

Guacamole

Chop 2 avocados, squeeze half a lime over, add 1 small crushed garlic clove, a handful of chopped fresh coriander, a pinch of chilli flakes and seasoning. Roughly mash with a fork.

Sundried Tomato, Pepper and Chilli Pasta

Super quick and easy meal tonight. I made it for three of us so up the ingredients if you want to serve more.

Serves 3

INGREDIENTS

6 sun-dried tomatoes in oil

10 cherry tomatoes, halved

1 red/yellow pepper, chopped

1 red onion, chopped

1/2 tsp crushed chillis

200g mozzarella, drained and cubed

Fresh basil

Seasoning

1 tbsp olive oil

300g pasta (I used @morrisons trottole)

METHOD

1. Finely chop the sun-dried tomatoes in a food processor with a little of the oil from the jar.

2. Cook the pasta according to the instructions.

3. Gently fry the onion and pepper in the oil until soft and golden. Turn off the heat. Add the chilli.

4. Add the tomatoes and stir.

5. Drain the pasta and put back in it’s pan.

6. Stir in the finely chopped sun-dried tomatoes and cubed mozzarella.

7. Season again if necessary and serve with torn basil on top.
