Gnocchi al Tegamino

I found out about this dish while searching for gnocchi recipes. I ended up finding an Italian account where there was no recipe but just a photo and the name of this dish and I thought it looked delicious. I found out it is a simple recipe with tomato sauce, gnocchi, cheese and basil so ideal for a midweek meal. I love @morrisons Savers range, the mozzarella is amazing and fantastic value at 45p!

Serves 4

INGREDIENTS

2 tbsp olive oil

1 large clove of garlic, crushed

2 tins of plum tomatoes

1 tsp dried oregano

Seasoning

2 x 500g fresh gnocchi

Fresh basil leaves

125g mozzarella, cut into cubes

A good grating of Parmesan

METHOD

1) Fill the kettle and boil.

2) Preheat the oven to 180oC.

3) Heat the oil in an ovenproof dish and gently fry the garlic for 1 minute until soft.

4) Add the tomatoes and break them up with a spoon.

5) Sprinkle in the oregano and season. Simmer gently for 5 minutes.

6) Pour the boiled water from the kettle into a pan, add salt and the gnocchi and simmer for 2 minutes until the gnocchi starts to float.

7) Drain and gently stir into the tomato sauce.

8) Scatter torn basil leaves and the mozzarella over the top.

9) Finish with a good grating of parmesan and bake in the oven for approx 5 minutes or until the cheese has melted.

10) Serve with a salad.

Prosciutto and Mozzarella Tortellini

This was just the ticket yesterday! After being out all afternoon, I didn’t feel like cooking so I decided to try this @lafamigliarana Rana prosciutto and mozzarella tortellini and @morrisons Italian tomato and mascarpone sauce that I’d bought in my @morrisons online shop this week. I warmed the sauce through while the tortellini was gently simmering- it was ready to serve in 2 minutes. Fast food and so tasty! I’ll definitely be buying these again- great to have as a standby. And the children devoured it- might need 3 packs next time instead of 2! 🤣💞

Moules et Frites

These moules et frites (I used @morrisons vacuum packed mussels) are so quick and easy to make. I buy three packs for a main meal for four of us.

You can microwave them or cook them on the hob. The best part for me is soaking the frites in the white wine sauce!

Indian Spiced Kebabs

These @morrisons Indian Spiced Kebabs where fantastic last night for a quick and tasty dinner. They take 25 minutes in the oven so brilliant if you’re short of time. I served them with @tildarice lime and coriander rice (another time saver- just 2 mins in the microwave), @morrisons raita and a salad made of tomato, cucumber, spring onion, coriander and juice of half a lime.

Trout, Beetroot and New Potato Salad

This was just for the adults tonight as the kids are not so keen on fish!

I just used a bag of baby leaves and added baby new potatoes which I’d boiled this morning and cut in half. Sliced beetroot and spring onion. I cooked trout fillets for 15mins at 200oC and flaked them over the salad. Then I finished it off with a dressing I made with 3 tbsp creme fraiche and 4 tbsp horseradish.
