Fajitas!

Homemade fajitas!!! You can’t beat a fajita can you?! 🤤 I used to buy the kits but for the last year or so I make them from scratch as the chicken fajita seasoning is so simple to make and the guacamole and salsa are so much tastier made fresh. The @morrisons mexican rice was a cheat but it was really tasty and only cost 47p!

Fajita chicken

I fry 3/4 sliced chicken breasts with sliced red onion and pepper and then sprinkle on around half a tsp of cayenne pepper, paprika, smoked paprika and cumin. Then I add a pinch of dried chilli flakes and a little water to stop it sticking.

Salsa

The salsa is simply 4 chopped salad tomatoes, with 1 small onion diced, the juice of half a lime, a pinch of dried chilli flakes and a small handful of fresh coriander chopped.

Guacamole

Chop 2 avocados, squeeze half a lime over, add 1 small crushed garlic clove, a handful of chopped fresh coriander, a pinch of chilli flakes and seasoning. Roughly mash with a fork.

Gnocchi al Tegamino

I found out about this dish while searching for gnocchi recipes. I ended up finding an Italian account where there was no recipe but just a photo and the name of this dish and I thought it looked delicious. I found out it is a simple recipe with tomato sauce, gnocchi, cheese and basil so ideal for a midweek meal. I love @morrisons Savers range, the mozzarella is amazing and fantastic value at 45p!

Serves 4

INGREDIENTS

2 tbsp olive oil

1 large clove of garlic, crushed

2 tins of plum tomatoes

1 tsp dried oregano

Seasoning

2 x 500g fresh gnocchi

Fresh basil leaves

125g mozzarella, cut into cubes

A good grating of Parmesan

METHOD

1) Fill the kettle and boil.

2) Preheat the oven to 180oC.

3) Heat the oil in an ovenproof dish and gently fry the garlic for 1 minute until soft.

4) Add the tomatoes and break them up with a spoon.

5) Sprinkle in the oregano and season. Simmer gently for 5 minutes.

6) Pour the boiled water from the kettle into a pan, add salt and the gnocchi and simmer for 2 minutes until the gnocchi starts to float.

7) Drain and gently stir into the tomato sauce.

8) Scatter torn basil leaves and the mozzarella over the top.

9) Finish with a good grating of parmesan and bake in the oven for approx 5 minutes or until the cheese has melted.

10) Serve with a salad.

Prosciutto and Mozzarella Tortellini

This was just the ticket yesterday! After being out all afternoon, I didn’t feel like cooking so I decided to try this @lafamigliarana Rana prosciutto and mozzarella tortellini and @morrisons Italian tomato and mascarpone sauce that I’d bought in my @morrisons online shop this week. I warmed the sauce through while the tortellini was gently simmering- it was ready to serve in 2 minutes. Fast food and so tasty! I’ll definitely be buying these again- great to have as a standby. And the children devoured it- might need 3 packs next time instead of 2! 🤣💞

Moules et Frites

These moules et frites (I used @morrisons vacuum packed mussels) are so quick and easy to make. I buy three packs for a main meal for four of us.

You can microwave them or cook them on the hob. The best part for me is soaking the frites in the white wine sauce!

Karahi Curry Night

You can’t beat a slow cooker curry night! This is as quick and simple as it gets. Just veg, a jar of sauce and chicken. Dead easy and the smell when you walk in through the front door after a long day at work is divine. Serve with microwave rice and naan and it can be on the table in no time.

I put 1 chopped onion and 1 chopped pepper in the slow cooker with 5 skinless and boneless chicken thighs. Poured over @morrisons karahi sauce and cooked on low for 11 hours. Served with @morrisons pilau rice and @lidl peshawari naan bread.

Sausage Cassoulet

I’ve adapted @tescofood Sausage Cassoulet recipe by using @morrisons time saving frozen soffritto mix. It’s chopped carrots, onion and celery ready to cook straight from frozen. My recipe is below and @tescofood recipe is linked in my bio.

INGREDIENTS

1 tbsp olive oil

12 pork sausages, I used @alfturner

80g diced pancetta

200ml white wine

200g @morrisions frozen soffritto mix

2 cloves of garlic, crushed

1 tsp oregano, chopped

1 tsp thyme leaves

1 tbsp tomato purée

1/2 tsp smoked paprika

@merchantgourmet tomatoey french lentil

400g mixed beans in water, drained

400g chopped tomatoes

150ml chicken/vegetable stock

Seasoning

METHOD

1. Fry the sausages and bacon in the oil on a high heat until the sausages have browned.

2. Add some wine a little at a time if it starts to catch and scrap the caught bits off the pan as you go- don’t take these out- they’re extra tasty!

3. Add the frozen soffritto mix and stir until softened.

4. Lower the heat and add the herbs and garlic and cook for a further minute.

5. Next add the paprika and tomato purée and stir.

6. Now pour in the lentils, beans and tomatoes and stir gently.

7. Now turn up the heat to medium and add the stock. Simmer for 20-30 minutes until the sauce has reduced.

Bolognese Sauce

The @morrisons frozen soffritto mix in this easy bolognese sauce is a game changer. Onions, celery and carrot all diced and ready to cook, makes cooking time so much quicker. I use it in a number of other dishes too when I’m in a rush like minestrone soup and sausage cassoulet which I’m making later this week.

Serves 6

INGREDIENTS

2 tbsp olive oil

140g diced pancetta

750g beef and pork mince

350g frozen soffritto mix

2 cloves of garlic, crushed

Seasoning

150ml red wine

Thyme

2 bay leaves

3 400g tins of chopped tomatoes

150ml semi-skimmed/full fat milk

METHOD

1. Fry the pancetta in the olive oil until golden.

2. Add the mince and break down with a spoon. Cook on a medium heat until the meat has browned.

-Spoon out some of the fat if you feel there is surplus in the pan.

3. Stir in the frozen soffritto mix and cook for 10 minutes.

4. Add the crushed garlic and cook for a further minute. Season.

5. Turn up the heat to high and pour in the red wine.

6. Then add the thyme, bay leaves and 3 tins of chopped tomatoes and stir.

7. It will seem quite a lot of tomatoes at this point but allow it to simmer for 10 minutes and the sauce will reduce.

8. Pour in the magic ingredient- milk and stir. This takes the sauce to another level making it richer.

9. It will again seem very saucy 🤣 but cover and reduce the heat to low and simmer gently for up to 1 hour (keep an eye on it, stirring occasionally to stop it catching.)

10. Taste and adjust seasoning.

11. Serve with spaghetti and a good grating of Parmesan.
