Vege Pasta

We had this super quick vege pasta for tea last night. I always try and have a tin of ratatouille in the cupboard as it’s so useful for adding veggies to meals without all the prep.

Serves 4

INGREDIENTS

400g pasta

2 tbsp olive oil

1 red pepper, chopped

1 red onion, chopped

1 clove garlic, crushed

Seasoning

1 400g tin ratatouille

1/2 jar sundried tomatoes, chopped

160g bag spinach

125g ball of mozzarella, chopped

Grated parmesan

METHOD

1. Start by getting 400g of pasta on the boil.

2. Fry the red pepper and onion in olive oil for 5 minutes.

3. Next add the garlic and fry gently for a further minute. Season.

4. Then add the ratatouille, sun dried tomatoes and spinach.

5. Finally stir in the cooked pasta and mozzarella.

6. Serve with grated Parmesan for extra cheesiness.

Cajun Cod with Puy Lentils

This is such a quick, easy recipe. The smoked paprika in the sauce gives it a lovely flavour. @merchantgourmet cooked puy lentil pouches are really convenient and cut the cooking time considerably.

Cajun Cod with Puy Lentils

Serves 4

INGREDIENTS

1 red onion, diced

2 tbsp olive oil

2 cloves garlic, crushed

150ml vegetable stock

Seasoning

5 sundried tomatoes, chopped

1 tsp smoked paprika

1 pouch @merchantgourmet cooked puy lentils

2 400ml tins chopped tomatoes

4 fresh cod fillets

METHOD

1. Fry the onion in the oil until softened.

2. Season and add the garlic, fry gently for a further minute.

3. Pour over the stock and simmer for 5 minutes.

4. Stir in both the tinned and sundried tomatoes, paprika and puy lentils.

5. Place the cod fillets on top and season.

6. Cover and cook on a low simmer for 15-20 minutes.

7. Check the cod is cooked through and serve.

Sundried Tomato, Pepper and Chilli Pasta

Super quick and easy meal tonight. I made it for three of us so up the ingredients if you want to serve more.

Serves 3

INGREDIENTS

6 sun-dried tomatoes in oil

10 cherry tomatoes, halved

1 red/yellow pepper, chopped

1 red onion, chopped

1/2 tsp crushed chillis

200g mozzarella, drained and cubed

Fresh basil

Seasoning

1 tbsp olive oil

300g pasta (I used @morrisons trottole)

METHOD

1. Finely chop the sun-dried tomatoes in a food processor with a little of the oil from the jar.

2. Cook the pasta according to the instructions.

3. Gently fry the onion and pepper in the oil until soft and golden. Turn off the heat. Add the chilli.

4. Add the tomatoes and stir.

5. Drain the pasta and put back in it’s pan.

6. Stir in the finely chopped sun-dried tomatoes and cubed mozzarella.

7. Season again if necessary and serve with torn basil on top.

Two Tomato Pasta

Two tomato pasta, hastily made after I defrosted the sausage cassoulet and realised there wasn’t enough for the four of us 🤦‍♀️😆

Simple and delicious.

Serves 1

INGREDIENTS 

75g pasta, I used @morrisons casareccia

1 small red onion, diced

5 cherry tomatoes, halved

4 sun dried tomatoes, sliced

Seasoning 

3 basil leaves

Parmesan

METHOD

1) Gently fry red onion in a little oil from a jar of sun dried tomatoes.

2) Once softened add cherry tomato halves and sliced sun dried tomatoes. Season.

3) Warm through and pour in cooked pasta. Toss to coat in the oil and tomato juices. 

4) Tear over some basil leaves. Serve with grated Parmesan.
